Google it. There are plenty of pics out there - look for '440c' stamped on the tang.
The clones out there claim to be 440c, so watch out for those.

No, the blade material never really affects flipping capability. It does, however, affect how fast your blade will dull down and how easy/hard it will be to sharpen it. It also affects how rust resistant the blade is.
For example, the blade on a 51 is D2 tool steel which is not a stainless steel and is therefore prone to rust. even though it's not a stainless it's fairly resistant, but it will rust quickly if you don't take care of it. A Kimura on the other hand is all sandvik 14C28N which is a stainless. Although it's a stainless steel, they put a bead-blast finish on the kimura which opens the pours of them metal and makes it easier to rust.
440C is a decent material because it's a high carbon stainless steel, it's fairly strong and hard, and will keep an edge fairly well.
