For an easier answer...

To edit a wiki page, go to that page. Click the 'edit' button at the bottom. You'll then see a box of text (or an empty box, if it's a new page). This is where you type in your text. When you're done, click the 'save' button below the text box. You can also click 'preview' to preview your edit before saving (highly recommended), or 'cancel' if you want to back out.

To format text in a wiki page, look to the left side of the edit box. You'll see a blue link titled 'Quicktags ...'. Click that and it will drop down a menu of text editing options. Those should be all you really need.
